chore: pin memtrack 1.6.1 and exec-harness 1.4.0 (#575)

memtrack 1.6.1 restores the return addresses uretprobes hijack in
captured stacks, so nested allocator frames such as C++ operator new
resolve correctly. exec-harness 1.4.0 emits Python and Node perf maps in
memory mode and launches node with the codspeed-node V8 flags, so
memory flamegraphs of `codspeed exec` benchmarks name interpreted
frames.
