Refresh the System Requirements and benchmark sections: - bump disk storage recommendation to 1 TB - add test environment specs (host, Postgres settings) - update mainnet/preprod/preview storage and RAM figures for dbsync-13.7.1.0 / node-11.0.1, including LSM measurements - enable pool_stat and offchain_vote_data in sample config
